9 Healthy + Mouth Watering Summer Recipes

Now that we’re really into summer, it’s time to break out the summer recipes. I love to eat fresh, cold, and raw foods during the summertime, as that is what is in season and what my body craves! I basically only drink iced drinks because it almost feels like a sin to drink a hot coffee in the middle of summer – but that’s just me!

These recipes are perfect for early mornings, picnics, lake days, and so much more. And they use the fresh ingredients that are in season right now, such as zucchini, tomatoes, cucumbers, and more!

Here are some of my favorite recipes that I make during the hot summer days that are refreshing, flavorful, and so delicious!

Dalgona (whipped) coffee

I started seeing dalgona (or whipped) coffee all over Pinterest, and it looked so delicious and interesting that I had to try it out. Although I still don’t understand the chemistry of how instant coffee, sugar, and water form a whipped cream consistency, It’s my new favorite way to drink coffee- as well as myโ€ฆ

Fresh & Flavorful Tabouleh; a summer salad recipe

This Mediterranean dish is a burst of freshness and flavor and is the perfect recipe for summer! I love this tabbouleh recipe so much as its full of healthy, nourishing and DELICIOUS ingredients and it goes wonderfully with so many meals. Mediterranean and Greek is one of my favorite “genres” of food, so when weโ€ฆ

Whipped matcha

Matcha is an amazing-for-you and super fun alternative to coffee. It’s been quite popular for a while, so I’m sure that you have heard of it before, but if you’re still unsure of what matcha is, it’s ultra concentrated powdered green tea leaves. Doesn’t sound too appealing at first, but it is really quite goodโ€ฆ

Raw and vegan carrot cake bites

This super easy dessert/snack/breakfast is: Raw. Vegan. Uses up leftovers. Low calorie. Guilt free. Good for you. Packed full of vitamins. Packed full of fiber, protein, nutrients, and healthy fats. Oh, and it tastes almost exactly like carrot cake with a cream cheese topping. I found this amazing recipe from the Ferns and Peonies blog.โ€ฆ

Green Pineapple smoothie (vegan + raw)

I know, I know, it’s winter, why have cold smoothies? 1. Your home probably has a heater 2. Even though you probably only want to have soup and bread, you still need fiber, vitamins, minerals, and all the good stuff from your greens, nuts, and seeds 3. This smoothie is AMAZING!! I did a threeโ€ฆ

cookie dough balls four ways! ( raw + vegan)

One of my first posts ever was a recipe for date balls. It included pictures of my 11 or 12 year old self making them too. Hydrating + Refreshing Summer Drink Recipes

Itโ€™s been warming up so much lately, and with the sun comes all things summery – including hydration! Iโ€™ve been working on my tan every day now that the sun is out, and Iโ€™m slowly inching closer to my goal of being brown by the end of summer (it’s gonna happen!). As Iโ€™ve been layingโ€ฆ

zucchini chocolate chip banana bread cookies

As you already know, I LOVE banana bread. I mean what can be better than an ooey gooey thick slice of moist, chocolatey banana bread?? Welllll, this recipe is basically the same thing but in cookie form (and with some added zucchini). I know that you may be feeling a little hesitant to eating sugaryโ€ฆ

  2. Everything looks incredible Hope! So fresh and tasty. I love the carrot cake bites and the tabouleh! While I don’t make these sorts of meals as often as I would like, I enjoy going to pinterest and looking through my food inspiration board. I’ll sort of meal prep through this and write a list of ingredients to get! Last week I made Greek lemon chicken bowls with sizzled mint goddess sauce. So good and really healthy too.
