I started seeing dalgona (or whipped) coffee all over Pinterest, and it looked so delicious and interesting that I had to try it out. Although I still don’t understand the chemistry of how instant coffee, sugar, and water form a whipped cream consistency, It’s my new favorite way to drink coffee- as well as my sister’s.
This is the perfect coffee variation for warmer weather, and I have a feeling that I’ll be making this quite often during the summer.
So what exactly is whipped coffee?
- Instant coffee – Although it’s disgusting by itself, it works well with this recipe
- Coconut sugar – I love using coconut sugar as an alternative to regular sugar, as it is more natural and easy for your body to digest. Plus you get a few minerals as well!
- Hot water – I’m not sure if this needs much explaining, but it dissolves the coffee and sugar.
- Milk + ice – You’ll pour these into a cup, and then top it with the whipped coffee. Any milk will work, although I recommend Califia almond or coconut milk.
So to round that up, whipped coffee is basically coffee whipped cream – without the dairy, and then topped onto milk and ice. I love to use a big stainless steal straw with my dalgona coffee, but you can use a spoon instead if you would like.
Serves: 1 / Prep time: 5 min / Cook time: 0 min

- 1 tbs instant coffee (organic is best!)
- 1 tbs coconut sugar
- 1 tbs hot water
- 1 cup milk (any type will work)
- 1/2 cup ice

- For a stand mixer: Put the instant coffee, coconut sugar, and hot water into a stand mixer with the whisk attachment and gently whisk until dissolved. Turn up to the highest setting and whisk for 1-2 minutes until it forms medium to stiff peaks.
- For hand whisking: Put the instant coffee, coconut sugar, and hot water into a large bowl and gently mix until dissolved. Whisk roughly 400-500 times (I know, I’m sorry) until it forms stiff peaks.
- Pour ice and milk into a glass and top with the whipped coffee. Gently stir until it’s almost an ombre color, put in a straw, and enjoy!
